03/01/2003 Entry: "St David's Day snack: Welsh Rarebit"
Welsh RarebitWhat could be more pleasant for a light snack or a spot of supper on St David's Day? For those who think that beer is the work of the devil - try this, you'll discover you're wrong ;o)
To make Welsh Rarebit, grate 8 oz of cheddar cheese and put it in a saucepan with a heavy bottom. Add 4 tabespoons of brown ale. an ounce of butter, a teaspoon of dry mustard and salt and pepper to taste. Melt together over a low heat, stirring all the time.Pour the mixture over toast, and put under a hot grill until it's golden and bubbling.
